It’s hard to believe that we are ready to wind up another school year.  Certainly students are counting down the days (as if staff members are not doing the same thing!). 

At the recent Legislative Action Conference there was still talk of looking for funding to end the reduced price meal category.  A pilot has been authorized but so far no funding has been allocated to it.

The past few months have had an impressive amount of media coverage on schools in South Dakota and their efforts to improve meals, vending, nutrition education, and opportunities for physical activity.  The media folks are looking for story ideas and have been supportive of spreading the good news about the positive steps.  You need to “toot that horn” to let your community know what’s going on at school.  Congrats to all who are doing things – whether or not they get published!

The Child & Adult Care Food Program folks also work hard to provide the training for children to sample new foods and be active.  That good start they give sometimes seems to disappear as children grow to be more independent as they start school; nonetheless, they have provided a good foundation.

The first step towards solving a problem is to begin!

Registration is OPEN: Certification Institute 2006

Newsletters have been mailed with registration information for Certification Institute 2006.  Online registration was planned, but it is still in the development and testing phases, so please complete the paper version that you should have received via mail the week of March 27-April 2. Child Nutrition Employee Appreciation Week

Caring. Trained. Thoughtful. Professional. Dedicated. These are just a few words that describe today’s child nutrition professional. 

May 1-5, 2006 is Child Nutrition Employee Appreciation week.  The School Nutrition Association has designated this one week each year to honor child nutrition employees.  Be sure to set aside some time to celebrate just how special these employees are and let them know you’re thinking of them.

Certificates of appreciation are available for long-term employees to be honored (10+ years) or those that are retiring.  You can request a certificate of appreciation for years involved in providing nutrition to children by sending:

  •  First and last name of the person to be honored

  • School District/Local Agency

  • Numbers of years the person has worked (if in more than one district/agency, please identify the numbers of years in each)

  • Name and address of person certificate should be mailed to from this office.

Upcoming Training for Food Safety

A DDN session on food safety will be held on April 10th from 3:15 p.m.-5:00 p.m. Central Time, 2:15 p.m. -4:00 p.m. Mountain Time. 

April 10, 2006 Update on Food Safety—2005 Food Code/Foodborne Illness

This session will focus on the new 2005 Food Code… A number of changes were made in the most recent update of the food code.  Joan Hegerfeld, Food Safety Specialist with SDSU Cooperative Extension Service will provide information from the 2005 Food Code on the “sick employee”.  We will also cover some of the most prevalent foodborne illnesses in South Dakota and how we can make sure we are protecting our customers from them.

HACCP will be offered at Fall Conference this year.  For those of you who have not been to training or are new managers this will give you an opportunity for training.  Training will be similar to what was offered in Oct/Nov. 2005 at the food safety program workshops.

Kids in the Kitchen 

From California Project Lean website.  Recipe courtesy of California 5 a Day; as published in Physical Activities and Healthy Snacks for Young Children; Team Nutrition Iowa;

New Wave Morning Cobbler

  • 1 cup canned, sliced peaches packed in juice, drained

  • 1 cup canned pear halves packed in juice, drained and sliced

  • 6 pitted prunes, each cut in half

  • ¼ tsp. vanilla extract

  • 1 orange

  • 1 cup low-fat granola

1.      In a large microwave-safe bowl, mix peaches, pears, prunes, and vanilla extract.

2.      Rub an orange against a grater to remove 1 tsp of peel.  Then, cut the orange in half and squeeze 4 cup orange juice.  Add orange peel and juice to fruit mixture.

3.      Top with granola.

4.      Microwave on high for 5 minutes.

5.      Let stand for 2 minutes.

6.      Spoon into 4 bowls and serve warm.

Snack Idea (1-5 year olds):

  • ¾ cup New Wave Morning Cobbler provides a fruit and grain/bread snack serving.

Kids on the Move

Adapted from Physical Activities and Healthy Snacks for Young Children; Team Nutrition Iowa;

Flying bean bags

Arrange the children in 1 line facing long open area.

The object of this activity is to practice and develop an efficient over arm throwing pattern.  The best way to do this is to encourage children to throw hard or far.  Do not use a target.

Hold the bean bag in the preferred hand, throw as far a possible.  Retrieve the bean bags after the signal and repeat.

Look for and encourage children to:

  •  take a big step

  • step on the opposite food from the throwing arm

  • begin by taking the bean bag in a backward and downward circle

Throwing is important in many activities; provide as much practice as possible.
